When I opened the prompt email this morning, my first thought was Karma strikes again. Yes, on the day we are asked to write about food, I am finishing preparation for a medical procedure.
It required a restricted diet for five days and a liquid diet since 6:00 AM yesterday. Also, in two hours, I had to consume sixty-four ounces of a chemical solution last night and another sixty-four this morning. My next solid food will be sometime after I come out of the anesthesia this afternoon.

I like to try new recipes we find (mostly) online. Cooking at home is so much better for our bodies and our budget. If I rely on creating things on my own, I often get into a rut and cook the same four recipes over and over.

My favorite food to eat is Nachos! I love the mess! I love the pile of food and I love the variety of tangy, salty and sweet flavors. Nachos can be made so many different ways and with so many different ingredients. I love food so much so nachos could easily be replaced with brisket, burrito, brisket burrito, mac and cheese, peach cobbler or caesar salad or belgian waffle Lol!
Nah yo I lied, my favorite thing to eat is a belgian, waffle. I order it every time I enter a diner. I really love belgian waffles and I can’t believe I didn’t that until now!

There is this terrific chicken dish I like to make at least twice a month, although lately because of my bad legs I haven’t been able to stand at the counter to prepare it. This makes me very sad. I got the idea for the recipe online somewhere and along the way, I added a few of my own touches.
In the crockpot I put:
1 1/2 cups of brown rice
2 cans of Campbells Cheddar Cheese soup
Eyeball the amount of water you want to add. The less water, the stickier the rice. I happen to love ‘sticky’ rice, so I don’t add that much water.
Since I don’t really measure this, I would say add a 1/2 cup less of water if you like ‘sticky’ rice.
Stir the ingredients well
Seasonings:
All Spice
Chicken & Garlic
Salt
Pepper
Stir these ingredients into the brown rice and cheddar cheese soup
Place 3 or 4 chicken thighs (NOT boneless)
On top of each thigh sprinkle liberally (except for the salt and pepper):
All Spice
Chicken & Garlic
Salt
Pepper
Put the crockpot on high for 5 hours.
Tips and Notes:
Because you are using brown rice, you need to let it simmer a little longer.
I love ‘sticky’ rice and don’t like to add too much water.
Be sure to sprinkle liberally into the rice and soup mixture, as well as on top of each chicken thigh, the spices. You don’t want to be that liberal with the salt and pepper.
You can switch it up and use Cream of Mushroom, Cream of Broccoli, or whatever you prefer.
When your house begins to fill up with the bountiful aroma, don’t be tempted to turn off the crockpot, especially if you are using brown rice. It does take longer for brown rice to cook. Have patience!
When the 5 hours are up, run into the kitchen, turn off the crockpot, fill your plate up and dig into the moistest chicken you have EVER unleashed into your mouth!
You will thank me for this!
